Raspberry Vinegar

A sweet/sour vinegar which has many tongue tingling uses, - in vinaigrettes, as a topping, as a refreshing drink, check our recommended favourite recipes.

 

Our Raspberry Vinegar is also available at a small number of selected delicatessens in the North Island."

 

Raspberry Vinegar Sauce

  • 4 medium shallots (chopped finely)
  • 3/4 cup of Raspberry Vinegar
  • 125gms butter
  • Dash of white pepper
  • Salt to taste

Saute Shallots in butter until tender. Add Raspberry Vinegar and heat until half the volume. Add butter in small amounts and whisk as butter melts. When smooth add pepper and salt.

 

Delicious over cooked Salmon or try with Chicken breasts that have been sauted and allowed to cook gently in white wine and mustard.

 

Raspberry Vinaigrette

Mix together

  • One and a half tablespoons of Raspberry Vinegar
  • Half a tablespoon of malt vinegar
  • Half a teaspoon of honey
  • One tablespoon of rice bran or olive oil
  • One clove of crushed garlic
  • Ground black pepper

Shake well

 

Drizzle over a leafy salad or warm asparagus for a exquisite taste sensation
